Barbara's Basic Meatloaf

"This recipe has been handed down to me - my mom got it from her mother. It's yummy, easy to make, and relatively cheap. Plus, I remember as a kid, I loved the days we had meatloaf because 1) it tasted good and 2) I got to help my mom squish the meat around to mix in the crumbs."

  • Heat oven to 350 degrees.
  • Mix all ingredients in a large mixing bowl. (Easiest to mix with your hands - kids love this! Just make sure you wash your hands before and after touching the meat.).
  • Spray an 8x4 (or 8x5) glass loaf pan with cooking spray.
  • Press mixture into pan. Bake for 1 hour at 350 degrees.
  • Note: Kids love making the cracker crumbs too! Put crackers in a ziplock bag and give them a masher (or they can use their hands).
  • Also: I prefer a 2 parts ketchup to 1 part mustard mixture, but my recipe says "to taste". The ketchup and mustard mixture can also be substituted with BBQ sauce or cocktail sauce.

  1. This was pretty good but a bit plain or bland for us. I used 1.5 lbs. ground beef and the rest of the ingredients as listed plus 1/4 tsp. garlic powder. I used the optional Worcestershire and for the crumbs I crushed saltines in the mini chopper. I molded it into a long loaf shape and placed it on top of a broiler pan so that the fat drips down. I glazed with the 2 parts ketchup/1 part mustard blend. Thanks for posting.
