Bean & Bacon Soup

"I have been making this soup for a long time now and everyone likes it. Very tasty if made with smoked bacon.You can use any beans you like.Can't remember how i came by it."

directions

  • Heat the oil and add the bacon and cook until the fat begins to run.
  • then add the chopped onion, garlic, celery,carrot, and cook for 5 min's med heat.
  • Then add tomatoes and stock and bring to the boil and simmer for 20min's
  • Stir in the beans and reheat until boiling
  • Add seasoning and chopped basil and serve with some nice crusty bread.

  3. This recipe was included in Book#228608. May 3, 2008 -- What a great recipe! Based on the other reviews, I doubled the recipe in order to freeze some, and I'm so glad I did. The smoky bacon is a wonderful addition to this delicious soup. I didn't add the olive oil and only used half of the fat from the bacon, but followed the rest exactly!! It's wonderful, Tea Jenny, and quick to make too!! Thank you for posting this terrific recipe.
     
  4. Oh my.....this is great comfort food at its best! We were hungry for bean soup and I found this one. I made it exactly and would change a thing. The smoked bacon really puts this over the top. I served this with a garden salad and our meal was complete. I highly recommend everyone trying this. Thanks for sharing this winner, Tea Jenny.
     
  5. SUPERB! I made this with some excess butter beans I had from my Butter me Up Baked Butter Bean, Bacon and Thyme Cassoulet. This soup was enjoyed with GUSTO by both of us this lunch time; I made it exactly as posted, with the exception of using fresh thyme instead of basil for a garnish - I have no basil at present. I used smoked lardons - I LOVE smoked bacon, and I think that this adds depth to this soup. It was an easy to make and very comforting soup - a meal in a bowl; we ate it with home-made crusty bread and had seconds! Thanks for posting such a wonderful soup recipe Tea Jenny - this has gone straight in to my "To Keep" recipe book! FT :-)

<p>Hi,&nbsp;&nbsp;I&nbsp; have three grown up kids and&nbsp;7 &nbsp;grand kids&nbsp;1&nbsp;greatgrandchild and an other on the way. I work p/t as a cleaner in a large office, and sometimes I help as tea lady and I do a bit of reception duties not a lot just a bit, I tend to cut people off in error of course.&nbsp;I have a wee dog called Molly, and is&nbsp;so so naughty, but we love her to bits even if she won't do as she is told. She is a cross between a poodle and a jack Russell and is now&nbsp;four years old. I love my garden and growing everything&nbsp;&nbsp;&nbsp;I just have a small plot, so I like things that grow well in pots, and of course cooking. I love all cook books so I cant pick one but I have one that I refer to a lot Delia Smith's complete cookery course, a good all rounder. I have discovered that I am now diabetic and have had to change my eating and cooking habits I now try to go for the healther option rather than all the cream, butter and sugar, and I have lost 32 pounds, and feel so much better.
