2. I'm not going to give any stars because I think I goofed and it's not fair to rate it badly.
Think I made a bad assumption - I could not find "grated" mozzarella cheese and the mozzarella I had wouldn't grate. It was a gooey mess. Did you mean "shredded"? Since I couldn't find it grated, I just used 1 cup of the parmesan - Wrong thing to do. They got very dry. Also guess you really have to use 2 onions. I used 1 - not much flavor. If anyone can explain the "grated" mozzarella, I'll try it again.
Thanks.

 3. These were pretty good appetizers; made them for our christmas party with friends. Took longer than 5 minutes for me to prep, but I really hate defrosting/wringing out spinach plus the rolling into balls takes awhile. Overall, the mix was very hard for me to work with, even after adding extra breadcrumbs. Maybe homemade breadcrumbs would work better? I made a half recipe and it made about 2 1/2 dozen walnut sized balls. I hope they're good reheated! Thanks for posting.

 5. My mom always makes these for parties, and there are never enough of them because they are so delicious everyone wants to eat like 50 of them. It's a simple recipe to make and it rarely if ever disappoints. Thanks for posting this great recipe, Gingerbee.

I'm a "newbee" to this site, but not to cooking. I love great food and to share recipes and this site is great! I don't know where the information of a "fry cook" came from, but I would consider myself anything else but that :) A NYC girl originally, lived in London and Canada where I am now. Met lots of interesting people along life's way who taught me a great deal and enriched my life with their knowledge of cooking. With my children now adults, the family has doubled in size and my commitment to making memories to pass down to another generation inspires me to cooking. I find cooking a creative expression of one's personality and never tire of new challenges in the kitchen.
