Really easy for a lasagna recipe. Everyone in our family thought it was great and I loved the fact that I could put a bunch of zucchini (which we have an abundance of right now!) through the shredder on the food processor and not have to fiddle with slicing it all. Great recipe!

Easy to make and so delicious! I used provolone cheese instead of mozzarella (out of mozzarella) and it worked fine! Even meat eating DH enjoyed!

Delicious! We loved this quick and easy, lower fat version of vegetarian lasagna. I did add some additional vegetables for personal taste. In a small amount of olive oil, I lightly sauteed some chopped onion, bell peppers, fresh mushrooms, and garlic. I added them to the sauce and followed the rest of the recipe as written. Also, I added some frozen spinach, thawed and excess water squeezed out, with the zucchini to the cheese mixture. The flavors were wonderful. Be aware that the pan is VERY full. I put foil under the pan, while baking, to catch spills and was glad that I did. My daughter, who is a huge vegetarian lasagna fan, claimed this a definite winner! I will be making this often. Thank you for sharing this fantastic recipe!

Excellent easy lasagne which everyone liked. Great way to hide zucchini in a meal for the kids - I used a yellow zucchini which totally blended in with the cheeses.

Easy and delicious! I used Classico Italian Sausage spaghetti sauce, and the results were fantastic! I'll be making this again...

This was the best meatless lasagna I have tried. It was so full of flavour and so easy to make without heaps of prebaking meat etc. A definate keeper! THanks for the recipe! PS I ran out of ricotta cheese so I used low fat cottage cheese and it was great!
