Chicken Marsala Mia

"After trying several chicken marsala recipes I just took what I liked best and made this one. You can use either dry or sweet marsala. I've made it, and liked it, both ways, but I have a slight preference for the dry marsala version."

  • Slice each of two chicken breast halves in half, longwise, to make four filets. If you prefer, pound four chicken breast halves thin.
  • Combine flour with oregano, salt and pepper to taste.
  • Dredge chicken filets in seasoned flour.
  • Heat olive oil in skillet over medium-high heat until it simmers, then add chicken filets and brown on each side.
  • Remove chicken from pan and set aside.
  • Add mushrooms, butter, and grated garlic to pan; cook until mushrooms are browned.
  • Add wine, cream and lemon juice, then return chicken to pan.
  • Lower heat, cover, and simmer for a few minutes, until chicken is cooked through.

Since then I've tried dozens of new recipes, learned how to make soap, and spent lots more time in my garden. Recently a nieghbor and I started raising chickens so we could have fresh eggs.
