  • Heat the oil, add the shallots and cook for 5 minutes, stirring occasionally. Add the mushrooms and cook for a further 5 - 6 minutes, stirring occasionally until golden. Stir in the sage, mascarpone and seasoning to taste.
  • Meanwhile, bring a pan of lightly salted water to the boil and cook the gnocchi following instructions on the pack. Drain, reserving approximately 3 tablespoons of the cooking liquid and place the gnocchi in a serving dish.
  • Stir the reserved liquid into the sauce, pour over the gnocchi and serve straight away garnished with fresh sage leaves and parmesan shavings.

  4. I can't believe I forgot to post my rating for this recipe before! I made this long ago, and we LOVED it. I made it again tonight, following the recipe exactly, only making the addition of some canned chopped tomatoes. I think there are a number of things you could add to this depending on what you are in the mood for, and what your tastes are, but the recipe by itself is great. I also think the sauce would taste great over any type of pasta. Thanks for posting the recipe, we will be making it again.
     
  5. March 2009: Fabulous! Can I give this recipe more stars? I was a bit worried that it would be too rich, but it's not. The sage leaves adds a freshness to this dish. And it's so easy to make. What a great company dish this will be. I made no changes, just added 1/2 tsp sea salt. Thanks for posting this keeper of a recipe. April 11, 2010: I made it again (for the 3rd time) but this time I used tortellini instead of gnocchi. It was a wonderful change, and very delicious. The sage-cream sauce is great. I'm sure it can lend itself to many variations.
