YUM! We enjoyed this very much and will be making it again. So easy and quick to put together with lovely flaour. I used fresh spinach and shredded parmesan cheese, the egg was a neat idea, I did use about double the garlic. Thanks for posting.

I made this with fresh spinach and just sauteed it for a few minutes then added the other stuff. This was a nice change for us!

This was good, not great to me. Although I think I may have enjoyed it more if I'd had fresh Parm. I subbed the canned Parmesan along with a small handful of mozzarella. Thanks for posting!

Outstanding!!! I am always on the lookout for new ways to prepare spinach and this is a winner. Used 1/2 bunch fresh spinach, including stems and increased the garlic to 2 cloves as I love garlic but my youngest found it too garlicky so the original is probably a better all-round quantity. Thanks.

Awesome! Loved the flavor of the garlic with the spinach. I did add a little olive oil to the pan to saute the spinach and garlic together. I beat the egg and added the Parmesan cheese to it before combining it with the spinach. Absolutely loved it and will definitely make it again. Thanks so much for sharing your recipe.

This was GREAT. I used two 10 oz packets of frozen leaf spinach and heated them on very low heat for about an hour (it didn't occur to me to defrost them beforehand), upped the garlic to 2 cloves and upped to 2 eggs. I thought it would look like a spinach omelette but it really didn't. I fed it to someone who hates garlic and they loved it, so this gets 5 stars in my book.
