Pasta With Mushrooms

- 12 ounces dry pasta, cooked
- 12 ounces mushrooms, sliced (button, chestnut, field or wild mushrooms)
- 1 ounce butter
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 1 garlic clove, crushed
- 1⁄2 lemon, juiced
- 10 tablespoons cream
- 2 ounces parmesan cheese, finely grated
- salt & freshly ground black pepper
directions
- Melt the butter with the oil in a pan. Add the onion and garlic and cook for a few minutes until softened, without coloring.
- Turn up the heat, add the mushrooms and cook for a few minutes, until just softened. Add the cream and simmer for a few minutes.
- Add the pasta and toss gently over a low heat until heated through, squeeze over the lemon juice and stir.
- Fold in the parmesan, season with salt and pepper and serve.

This is a very good and easy recipe. The only thing I will change next time is using fettuccine pasta instead of the ziti I had on hand. I think the thinner,lighter pasta will work better. Being a new vegetarian I am always looking for new and different things to eat and this was very good. Thanks for posting.
