Don't know what to do with all those leftover mash potatoes? Is time short and you need something fast to feed your hungry family? You'll love this so much you'll want to make extra mashed potatoes just so you can make them. The recipe comes from Chatelaine Food Express Quickies 2.
- Preheat oven to 450°F.
- Pat mashed potatoes into 4 small round shapes that are about 1/2 inch thick and place on an oiled baking sheet.
- Sprinkle with cheese and seasonings.
- Bake about 20 minutes (cheese should be golden).
Tasty and easy to prepare - and it is definitely a great use for leftovers! I used the basil and oregano option and added a little bit of shredded mozzerella with the Parmesan on top. Very enjoyable. Thanks for sharing! Veggie Swap 38
I'm not sure what happened with these. I guess my mashed potatoes had too much liquid in them; instead of having compact potato cakes we ended up with soft potatoes spread out all over the pan. The flavor was good, though. I don't blame the recipe; I think maybe we had the wrong kind of mash for this. Thanks for posting!
Oh, so good, Dreamer. i added some of the cheese and herbs to the mashed potatoes and sprinkled more on top! Yummy to the max. Thnx for sharing. made for KcK's Forum.
