Best One-Skillet Lasagna

"I came across this recipe in the most serendipitous manner...on my way to work going 50mph I saw some trash blowing across the road...it got stuck to my car and I could hear it fluttering all the way to work. When I got out of my car I found a piece of newspaper stuck to my front grill. I took it off and what was it? A torn out page from a week old newspaper that has 4 yummy sounding recipes! Wow.   • Cook meat in a 12-inch nonstick skillet over high heat, breaking it into pieces with a wooden spoon until fat renders, 3-5 minutes. Drain.
  • In the skillet stir into the meat, garlic, red pepper flakes and 1/2 tsp salt and cook over medium-high heat until fragrant, about 30 seconds.
  • Sprinkle broken noodles into skillet, then pour in tomato sauce and water so that it covers the noodles (you may need to add extra water if noodles are especially dry).
  • Cover and cook, stirring often at a vigorous simmer until noodles are tender, about 20 minutes.
  • Turn off heat, stir in half of the mozzarella and half of the parmesan. Season with salt and pepper to taste.
  • Dot heaping tablespoons of ricotta over the noodles, then sprinkle the remaining cheeses.
  • Cover and let stand off heat until cheeses melts, 3-5 minutes.
  • Sprinkle with basil before serving.

  1. Hubby RAVED about this dish! Said it was way better than hamburger helper and he still loved it after I told him I snuck in whole wheat lasagna noodles instead!!
     
  2. Made only one change and it was only to the pasta used. Since it's near to impossible to break lasagna noodles in nice pieces, I substituted mafalda past - they look like mini-lasagna noodles. Other than this, I followed the recipe and it turned out so good! Thank you so much!
     
  3. SO delicious, SO easy to make and SO unlike any other lasagna recipe I've ever made! Making this felt like a leap of faith into unfamiliar territory. And WOW: what an exciting end result, and a sense of having discovered a fabulous new way of making a much-loved dish! I made a few adjustments to meet our taste preferences: adding a chopped onion, doubling the garlic and omitting the red pepper flakes, and using 1/2 red wine and 1/2 water in step 3. Next time I make this fabulous recipe, I may well add mushrooms and thyme. Just LOVED the simplicity of making this recipe. Thank you, Engrossed, for a great recipe!   1. This is one of my favorite go-to recipes. I usually have everything on hand. I have even used cottage cheese in place of ricotta (just blended it smooth first) and added spinach to the mix for some added veggies. My family loves this recipe, too. Thanks!!
     
  2. Really good! I used more beef than called for and substituted Italian sausage for the pork. Added a small drained can of mushrooms. Used Newman's Own Sockarooni sauce for the pasta sauce as it is loaded with flavor. This was really simple to make without compromising the flavor from a traditional lasagna. Perfect for a night when you want a good meal but don't want to fuss a lot in the kitchen. Great recipe!
