I was looking for a fast, meatless recipe and this really fit the bill! Used half and half instead of full-fat cream, and also added a little of the starchy water the pasta cooked in to keep things 'saucy'. Added more spinach, too. Excellent!

Really good and easy, definitely will make again, it's really hard to find a good sauce for this dish. The only thing I did was only add 2 Tbls to the pasta and added a little extra spinach. Also I grilled some chicken seasoned with seasoning salt, garlic powder, italien seasoning and a small dash and white wine and a tiny bit of terriyaki. Went really nice together.
