Winter Spinach " Pesto" (Vegan)

"I looked up a recipe for winter pesto on recipezaar, but I never follow recipes completely. I just used the idea and this is what I came up with."

• Ingredients: 8
• Yields: 2-3 cups of pesto
• Serves: 6-9

ingredients

• 2 cups spinach
• 1⁄3 - 1⁄2 red bell pepper
• 1 tablespoon dried basil (fresh would be better)
• 1⁄2 tablespoon dried parsley (fresh would be better)
• 1⁄4 cup canned chick-peas (more for on top if you want)
• 1⁄4 cup coconut milk
• 1⁄4 cup walnuts
• black pepper

directions

1. Add ingredients into a food processor or blender.
2. Blend until smooth.
3. Put over pasta and top with chickpeas if you want.
