  • In large skillet, brown beef with onions and garlic then drain.
  • Add tomatoes, water, tomato sauce, parsley, basil, oregano, and salt into hamburger mixture and mix well.
  • Stir in uncooked pasta.
  • Bring mixture to a boil, stirring occasionally.
  • Reduce heat, then cover, simmer for 20 minutes or until pasta is tender, stirring once.
  • In a medium size bowl, combine cottage cheese and Parmesan cheese.
  • If desired, sprinkle in basil and pepper to taste.
  • Mix cheese mixture.
  • Drop cheese mixture by rounded tablespoons onto pasta mixture in skillet.
  • Cover and cook for 5 minutes.
  • Sprinkle with shredded mozzarella, if desired.

  2. What an easy dinner, although I did tweak it. I used our homemade chicken breast Italian sausage and my home canned spaghetti sauce. Our grand children loved it-how easy was this. I am making a camping recipe book of all things that can be cooked in one skillet and this is going in the book.

  5. Oh Sherrie, this is a wonderful weeknight meal! I added extra fresh basil and minced garlic just because we crave it around here. Also, I used 2% cheeses since fat free doesn't calm the cheese beasts in us. No need to drain the lean beef, so one step skipped. We each (4 of us) had a second serving and cleaned up the skillet. Definitely a make again and again meal. Thanks for sharing, Sherrie!
